Do we all love this beautiful spring weather? It has been 30 degrees in Coffs Harbour for a couple of days now so I am out of hibernation and ready to enjoying some bubbly on the beach.
It is perfect weather to giveaway this beautiful spring hamper created by Lindeman Wines. Just to refresh your memory it comprises two bottles of refreshing and crisp Lindeman’s Early Harvest Sparkling (25 per cent lighter in alcohol*), a limited-edition Lindeman’s cookbook with recipes by celebrity chef Dominique Rizzo and gardening tips by guru Meredith Kirton, two premium outdoor Plumm glasses and a scented candle.
But before I announce the lucky winner I wanted to share a cocktail created by Lindeman’s ambassador and celebrity chef Dominique Rizzo. It is a Sparkling Moroccan Pomegranate Splash. Perfect for a picnic, aperitif or lunch with the girls, this spring spritzer is refreshingly crisp and light.
Sparkling Moroccan Pomegranate Splash
Makes approx 2 lt
½ cup pomegranate molasses
½ cup caster sugar
¼ tsp. vanilla bean paste
1 tbsp. Gourmet garden Ginger
2 bottles Lindeman’s Early Harvest Sparkling
1 cup fresh pomegranate seeds – when available
1 cup fresh picked mint leaves
1 lemon sliced, thinly
Ice
Method:
Combine the pomegranate molasses, caster sugar, vanilla paste and ginger in a bowl and stir until the sugar dissolves.
Pour this into a large punch bowl or jug and stir in the Lindeman’s Sparkling, the pomegranate seeds and the fresh mint, top with crushed ice and stir.
